Japanese food boom has broken out all over the world. Few decades before, there were lots of foreigners who would not take raw fish, regarding them as grotesque food. However nowadays sushi which is made of raw fish and rice has become very popular as healthy food among wide spread various type of foreigners.
Japanese people have been fond of taking fresh raw fish and vegetables. However it requires highly sophisticated and clean food supply system throughout the society to enjoy raw food culture because raw foods tend to get rotten easily under high temperature and humidity in Japan.
Japanese prefer to eat raw mainly because they prefer to enjoy real taste of each food without cooking or arranging. It is one of the specific characters of Japanese culture to respect real taste or value of a raw material.
